This dish has all the summer flavors of Mexican Street Corn and it is quick and easy to make. Think buttery fire-roasted corn, mayo, salty Mexican cheese, fresh lime, garlic and powdered chili spice plus crisp smoky bacon. It’s one of my favorite summer indulgences and it is a crowd-pleaser.
